Colors of Sicily Cauliflowers Recipe whith Pasta


it's now time for cauliflowers,
you will see them grow in so many different colors, like the purple one is populare for Catania growing
It's the season when the farmers proudly display their cauliflower harvest in colourful rows on tables at the farmers' markets.
The cauliflowers vary in size and colour, although the size or colour does not determine its quality.

Colourful Cauliflowers

Cauliflowers are not just white anymore; they also grow in colours of orange, green and purple. Regardless of the colour, cauliflower is low in fat and calories and loaded with Vitamin C and antioxidants.

this is a traditional Sicilian Pasta Dish Made with Cauliflower
you need :

Rigatoni or Buccatini / 1 large head green cauliflower

Oliveoil - Salt - Pepper - Curry

1 large onion, chopped / 1 cup of pine nuts / 1/2 cup raisins or currants


1. Fill a pot with salted water and add some curry


2. Bring to a boil while preparing cauliflower cut florets in small pieces


3. Add the cauliflower to the pot and cook for about 5 minute


4. Remove cauliflower from the pot leaving the water in the pot


5. Cook onion in olive oil over medium heat until soft and a little bit brown


6. Add pine nuts and raisins (currants) for 2 minutes


7. Add reserved cauliflower with some of the curry water and cook until it becomes a cauliflower sauce


8. Put rigatonis in the cauliflower curry water and cook according directions untill the pasta is al dente, drain in a colander and


9. add to the cauliflower sauce with some pepper


10. Sprinkle with toasted bread crumbs

Food in Sicily
